Along a quiet Paris side street, I stepped into a pastry shop advertising gluten free baked goods. The case was full of amazingly beautiful French pastries (and probably not gluten free.) I sighed as I eyed the case looking for the allergy-friendly section. Nothing was labeled. “Excusez-moi, Monsieur, which pastries are gluten free?” I asked the man behind the counter. He smiled at me, “Mademoiselle, everything. Everything is gluten free.”
He leaned forward and said in a whispery French accent, “Here, you can eat it all.”
I thought I would burst into tears! I was so used to being told, “we have ice cream that is gluten free” or “This salad is gluten free.” Life with food allergies can be so isolating, but not anymore. Here at The Gluten Free Baking Company, we know how complicated each day is when you simply cannot eat certain foods. We strive to make amazing baked goods that taste so good you want to share them with your family and friends.

Owner, Roanna Canete has a diverse background, having spent the last 10 years traveling and living internationally. She holds a Master’s degree in Organizational Leadership as well as an MBA in Entrepreneurship, has served as a leadership consultant, and has taught at the graduate level. Roanna keenly understands the unique challenges associated with food allergies and has blended her love of baking with her desire to help reshape the food industry. Her goal is to create a new world of delicious foods that help transform San Diego into a safe place for allergen diners.
When her toddler son was diagnosed with multiple food allergies, she began to notice the difficulties of finding good tasting food for him. While living in Italy, she studied cooking, baking, chocolate making, and gelato from a culture that places the highest value on food quality, freshness, taste, and appearance. Roanna currently makes her home in Coronado, CA with her family.
Cake Designer, Lisa is a San Diego native! After studying psychology and marketing at USC, she spent two years in the marketing and advertising industry. More and more, she found herself drawn to cakes (eating or baking, it really didn’t matter), so she packed her bags and headed to Canada to attend the Bonnie Gordon College of Confectionery Arts. Upon completion, she began working in bakeries as a cake designer. She felt that she’d found her true passion, and wanting to cultivate her knowledge further, she enrolled in pastry school. One month before attending, she was diagnosed with celiac disease, which was a crushing blow. She now worked in an industry where she couldn’t eat anything! Undaunted, she finished pastry school and was promptly hired by Duff Goldman at Charm City Cakes as a cake designer. Currently, she has found her place at The Gluten Free Baking Company. Lisa is known for her show-stopping cakes, her incredible talent for composition, and her desire to make stunning creations that everyone can enjoy.
Last year, Lisa was showing an incredible piece at the San Diego Cake Show. A passerby with celiac disease was examining her cake, commenting on all the intricate details. She was told the designer was a celiac. With tears in her eyes, the passerby said, “I didn’t know something this beautiful would be open to somebody like me.” With Lisa, cakes this beautiful are now open to everyone.
